Privilege is a rural Barbadian dish and as well as giving its name to the book it is pictured on the cover. The authors were Errol Barrow, whose name may seem familiar as he was the prime minister of Barbados from 1961 until 1976 and again for a short time from 1986 until his death in 1987. Doctor Kendal Lee was from Trinidad. Both of these men had a common passion for Caribbean Cuisine.

Because of their geographical location the caribbean islands have had many people of different races and nationality come and go, but most if not all have left their mark on caribbean cuisine.
